capelli Capelli D’Angelo (.8mm)
Our classic angel-hair, generally used in soups, and also great in stir-fries.
 
shells Conchiglie (approx. 22mm length)
Medium sized shells – use in soups or with meat sauce, similar to fusilli corti.
 
fettuccine Fettuccine Nidi (6mm)
Nests of our classic fettucine – thin and elegant, perfect for cream sauces.
 
fusilli Fusilli Corti
Short twists, use with ragu, ricotta sauces – a standard shape for salads.
 
lasagne Lasagne, Short Cut
Thin, flat lasagne is as delicate as homemade. No precooking required – preblanched, it can be used for a variety of filled and wrapped shapes.
 
linguine Linguine Nidi (3mm)
Linguine in nests, narrower than fettuccine, but for similar uses and slightly lighter sauces.
 
orzo Orzo
A tiny pasta shape that resembles large grains of rice – ideal for vegetable or thin soups.
 
pappardelle Pappardelle Nidi
The name pappardelle derives from the verb "pappare", to gobble up. These nested ribbons are about an 25mm wide and are best used with cream sauces or other sumptuous sauces.
 
penne Penne Rigate
Ridged penne are designed to take oil or butter-based sauces, meat or vegetable creations, and cheese sauces.
 
spaghetti Spaghetti a la Chitarra Nidi (1.5mm)
Spaghetti in nests with a twist – the strands are square.
 
coming soon Tagliatelle (8mm)
Very thin, delicate, flat noodles (thin enough to see through when held up to the light). Tagliatelle is thinner and slightly wider than fettuccine.
